Anyone else finding that these are mental to control they just don't seem controllable i've mucked out with the tuning and getting there has anyone got a good setup yet?

Do you mean the superkarts?
I've had the same problem and I'm new to this tuning options, I do love it though.
Here are my settings for the Summerton track: (Based on a reset, so the default are as they were)

Tires and Brakes:
Front Left Tire Pressure: 1.07 Bar
Front Right Tire Pressure: 1.12 Bar
Rear Left Tire Pressure: 1.05 Bar
Rear Rogjt Tire Pressure: 1.05 Bar

Alignment
Steering Ratio: 15.8:1 (full)
Left Caster Angle: 12.9
Right Caster Angle: 12.9
Front Toe-In Angle: 2.6

Suspension
Front Sway Bar: 13N/mm

Force Feedback (this did the most for me)

Spindle
Master Scale: 66

Note that I use a steering wheel and I am on a PC, so it might be different for you since I don't know on what platform you play Project Cars.

P.S. try out these settings and work on it until you are happy with the Practice session.

250s are beasts, pure and simple. The few people I used to know who raced then for real were regarded much like the rest of the Muppets must have regarded Animal.

The above set up is probably something I'd use. Essentially, I find reducing rear tyre pressure, maxing out the steering ratio would be the two things I'd change first. YMMV.

Yes they are haha, I love how fast they can go through corners.
