I put filter on pro, find lobbies and I see that they have all the assists on.

That was setting was used for different handling modes in the past (Amateuer, Novice, Pro), but in the end were are using the real handling model for everybody.

So this filter will be changed.

If set to real then you can use the real aids for a car that has/uses them in real life.
You can then toggle them on and off from mapped buttons or keys while driving.

And is now fixed/usable for the next patch. Gameplay such as rain, time of day, mechanical failures, full damage etc influence the skill filter results.

Good news,

Although I notice on the steam leaderboards that my time, although I use real assists for all cars, shows my F1 time at Le Mans as having ABS, TC and stability on, whereas none of them would be on in a formula A car using Real? Is that just a steam issue?

No it's a general LB problem... been like that forever.
