It's a difficult balance to code, I'm sure. If you just send the 1's and 0's from the physics out of the PC and to the end user, the end user is missing too much information for it to feel real and it makes driving feel harder than real life. If you "fill in the blanks" too much, it makes it easier than real life and also unrealistic-feeling.
To be honest I didn't have any issue racing with my DFGT in PCARS2 in the beginning, I only upgraded some months later to a G29 when some buttons on the DFGT stopped responding. But then again I have never tried a better wheel, so I may just do not know what I am missing.

Hi,i've had similar problem when i started playing this game,i lowerd the sensivity of gas pedal to 4.
I see you have too much gas input in sudden when the front wheels are not straight and keep turning.

I will try to lower the gas pedal sensitivity

The problem is not the setup, you have too much angle of turning after mid corner, the rear continue rotating due to that.
Lower the speed of your video to 0.25

    Work on your driving technique.
I hate to break it to you but the issues you're having are not caused by the car but your driving.

From the video I've seen multiple issues with it:

    1. You're braking too late, brake earlier.
    2. As a result of 1. you're missing the corner apex and try to compensate this with a higher steering angle
    3. Your steering isn't smooth enough. It almost looks like you're using a gamepad instead of a wheel
    4. Your pedal inputs are too "digital". Try to push the throttle more smoothly and consistently.

I highly recommend to watch a few youtube videos on driving technique and racecraft, like those:
