Well I do think so indeed. Take a look at my specs.. not very different from yours. I had to buy 2 more IIyama 1440p screens as I already had one. I did not had the money to buy 3x 1080p screens. But to be honest, if I need to buy new screens with my current setup, I would buy 3x 1080p screens. I can race with a res of 7680x1440 but I have to reduce the settings. I had everything always maxed out with 1 screen. With the triple setup it is a no go. Downscale to 1080p is not a great thing to do on a 14400 screen.
With 3x 1080p I could have run the most race games, I own, almost maxed out.
Now with 3x 1440p it looks awesome of course. If you don’t mind to tone down some settings, (shadows grid size and reflection mostly) you will be able to run it on triples. I can maintain a 60fps. Sometimes with the start of a race it drops a few frames for a couple of seconds to 55/60fps.
Other than that it is an awesome setup and when I update my current 1080ti to a 2080ti I think that problem is solved as well.
All in all, I’m happy I made that decision and bought a triple setup. It is almost as immersive as with VR. The 50 degree angle of the side screens makes it feel if you’re sitting in a real car. It feels very natural. I can race for hours and hours without sweating. I can use mobile devices as 3rd and 4th screens, can use my keyboard and mouse, and talk with my wife to order coffee and beer.
As said many times before, I really do love VR but the drawbacks made me switch from VR to a triple setup.

Neither could I so I started my posts here. As it has to do with F1.
As for the game itself, just installed it, did te gamen setup. All maxed out on my 7680x1440p is a bit to much for my system but with the preset setting set to high I get a steady 60fps on the Spa track.
As for the triple support, it is bloody awesome even better than in F1 2018. And the looks of the game is really outstanding.
I know what I’m going to do today.
